An easy sugar cookie bar recipe that eliminates the need for rolling out and baking individual cookies. These festive bars can be made with blue spirulina and raspberries for a natural touch, or you can opt for sprinkles.
 Set oven to 350 F.
Cream butter, vanilla & sugar together until fluffy and light yellow.
Add egg to creamy yellow mixture and mix until combined.
In a separate bowl, add dry ingredients (flour, baking soda, salt) and then mix into wet ingredients until just combined.
Place into a 9x13 pan that has been greased and lined with parchment paper (so you can remove easily).
Bake for about 15 minutes (or until edges are golden).
For buttercream: whip butter until light and fluffy.
Add in vanilla and salt and whip until combined.
Add in sifted powdered sugar and mix until combined.
Add 1 tbsp of cream or milk (more if needed).
 Spread buttercream all over cookies.
Top with sprinkles (or blue spirulina and raspberries for natural coloring).
