Roasted Tomato & Basil Soup

1: Combine sun gold tomatoes, cherry tomatoes, red pepper, garlic, and white onion in an oven-safe dish.

2: Drizzle with avocado oil, and season with salt and pepper.

3: Roast in the oven for 40-50 minutes at 375°F.

4: Once roasted, remove the garlic from its shell.

5: Blend the roasted vegetables with basil, chicken bone broth, and heavy cream until smooth.

6: Adjust seasoning with more salt and pepper to taste.

7: Serve with grilled cheese of choice.
