Kale, Avocado, & White Bean Salad

1: Marinate the garlic cloves in the dressing ingredients (lemon zest, lemon juice, maple syrup, dijon mustard, olive oil, salt, and pepper). Remove the garlic before serving.

2: Clean and cut the kale into bite-sized pieces and massage it with extra virgin olive oil.

3: In a large bowl, combine the kale, diced avocado, cooked (or canned) white beans, sunflower seeds, hemp seeds, and pepitas.

4: Dress the salad with the prepared vinaigrette.

5: Toss everything together and serve.
