Delightful Honeycrisp apple cream scones featuring a gooey cinnamon sugar center. These scones are perfect for fall, made with fresh apples and a touch of cinnamon for a warm and sweet flavor.
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Mix cinnamon sugar mixture ingredients in a small bowl.
Peel & cut apples into small pieces (about 1cmx1cm). Optionally, add a squeeze of lemon juice to prevent browning.
Sift the flour, sugar, baking powder, and salt together in a medium to large bowl.
Beat the cream with a whisk or mixer until you reach medium soft peaks. Fold half of the cream into the flour mixture, mixing carefully to incorporate.
Mix in the other half of the whipped cream gently.
 Gently fold in the apples.
Lightly flour a work surface lined with parchment paper, and carefully pour the mixture onto the surface. Shape the dough into a 1 inch thick rectangle.
Spread the cinnamon sugar mixture onto the scone layer and fold the dough hotdog style onto itself. Freeze for 45 minutes.
Bake for 20-30 minutes on a parchment-lined tray until golden brown.
